- 5 cups fresh arugula washed and dried
- 1 cup cherry tomatoes halved
- ½ cup thinly sliced red onion
- ½ cup sliced cucumber
- ½ cup crumbled feta cheese
- ¼ cup toasted walnuts or pecans
- 1 small pear or apple thinly sliced
- ¼ cup dried cranberries or pomegranate seeds optional
- For the Vinaigrette:
- ¼ cup extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1 small clove of garlic minced
